AIMEE FORTNEY'S QUICK AND EASY (SPICY AND CREAMY) CHICKEN ENCHILADAS


One weekend after having a Mexican dinner party, I had shredded chicken leftover.  You could make this with leftover chicken, store-bought chicken or cook 3 chicken breasts for this recipe.  The cream cheese helps to cool the heat from the green chilies in the tomatoes.  A perfect blend!


2 cans of diced tomatoes with green chilies, liquid drained 

12 ounces cream cheese

4 cups shredded chicken (Ground meat or seafood could be used)


9 (six inch) flour tortillas

½ cup to 1 cup Queso Fresco

Heavy whipping cream (approximately 1 Tablespoon)



Preheat oven to 350.  Grease a 9 x 13 inch dish and set aside.  Pour tomato mixture through a colander to drain liquid.  In a medium saucepan, heat tomato mixture and cream cheese until cream cheese is melted.  Stir in shredded chicken and remove from heat.  Spoon mixture down the center of flour tortillas, roll up and place seam side down in greased dish.  Repeat with remaining mixture.  Crumble queso fresco over tortillas, then drizzle heavy whipping cream over top.  Bake for 30 to 40 minutes.  Serve with pico de gallo, sour cream and guacamole.  This is a great base recipe, and you could easily add other seasonings or ingredients.


AIMEE FORTNEY'S ICE CREAM PIES

I love to let ice cream soften, and put it in a large mixing bowl.  Then, I like to add cookies or candy to the ice cream, and pour into a pie crust, then freeze.  Some examples are:


Oreo Peppermint Ice Cream Pie

Banana Split Ice Cream Pie

Key Lime Ice Cream Pie

Kahlua Chocolate Ice Cream Pie

Fudge Brownie Ice Cream Pie


It is also great to add your favorite “mix-ins” to the ice cream.  You can add cheesecake bites, you can freeze your key lime pie, then cut into chunks and mix into vanilla ice cream; add raspberry sauce, strawberry sauce, blueberry sauce to vanilla ice cream.  Or, you can add cookie dough bites to vanilla or chocolate ice cream.  Make your own peppermint ice cream by adding 1 teaspoon peppermint/mint flavoring and broken pieces of peppermint candy into vanilla ice cream.  I personally like to add chocolate sauce to the peppermint, and use a chocolate crust!  It is a beautiful and delicious treat any time of year, but especially for Christmas time meals!


Your options are limitless with candy bar add ins, extract flavorings, etc.  Drizzle in thin lines, chocolate ganache (or syrup) to make the top of the pie look nice, and freeze beautifully!
